Ingredients

  • 1 ripe banana
  • 1 sweet potato, mashed
  • Β½ courgette, grated & squeezed dry
  • 1 carrot, grated
  • 5 Medjool dates, soaked & blended
  • 2 tbsp ground flaxseed + 5 tbsp water
  • 2 tbsp peanut butter
  • 100g black beans, mashed
  • 1 tbsp raisins
🌾 Dry Base
  • 100g oat flour (blended oats)
  • 2 tbsp cocoa powder
  • 1 tsp baking powder
  • Pinch of salt
  • Dark chocolate chunks (70%+)
✨ Spice Mix
1 tsp cinnamon Β½ tsp ginger ΒΌ tsp nutmeg 1 tsp vanilla
🌱 Plant Boosters

Add ~1–2 tbsp each

Chia seeds Pumpkin seeds Sunflower seeds Sesame seeds Chopped almonds Chopped walnuts Chopped cashews Desiccated coconut

Preheat oven to 180Β°C. Line a loaf tin with baking paper.

Mix flaxseed + water in a small bowl. Leave for 5 minutes to gel into your flax "eggs".

Blend banana, soaked dates, and sweet potato together until completely smooth.

Stir in the grated courgette, carrot, flax mix, peanut butter and raisins.

In a separate bowl, whisk together all the dry ingredients, oat flour, cocoa, baking powder and salt.

Fold the wet mix into the dry mix gently, don't overwork the batter.

Stir in all seeds, nuts, black beans, spices and dark chocolate chunks.

Pour into the lined loaf tin and smooth the top.

Bake for 35–45 minutes until the top is firm but the centre stays gloriously fudgy.
